Leon's grandparents immigrated from Greece to Tanzania in the early 1900s and worked in coffee production. As a third-generation farmer, Leon saw the changes in the industry - the drop of prices in commodity coffee, the rise of popularity in specialty coffee, and the environmental changes impacting the local area. He realized the necessity in growing specialty coffee while focusing on sustainability, if he wanted to continue in his profession and passion.\u003c\/p\u003e\n\u003cp\u003eLeon and his wife Aideen have been steadily growing their operation, growing more varieties from tree saplings in their nursery, and excelling in various processing methods, all while generating jobs for the local community and preserving the wildlife. \"Tembo\" means \"an elephant\" in Swahili. Their farm, Tembo Tembo Estate took its name from their neighbors, the elephants in the Ngorongoro Conservation Area which borders the farm. This specific lot of coffee was processed at one of SNAP's facilities, the Chelbesa washing station in Yirgacheffe. This washing station uses water-saving eco-pulpers to float, sort, and to remove the coffee cherry skins to the parchment coffee. The mucilage is removed by keeping the parchment coffee in a fermentation tank for two to three days. The coffee is then placed in a soaking tank for 12 hours, then put on a raised bed to dry for 7 - 10 days. The dried coffee is then sorted for the second time and any damaged beans are removed. The result of this carefully processed coffee is one with a classic, clean and delicate washed profile.
