El Vergel began as an avocado farm before the Bayter family introduced coffee in 2009. Driven by curiosity and a passion for innovation, they began experimenting with fermentation and planting varieties such as Geisha, Java, Pacamara, Red Bourbon and Laurina. Since 2017, the farm has continued to evolve through research and experimentation, becoming a pioneer in coffee processing. Today, El Vergel cultivates more than 28 varietals and continues to push the boundaries of coffee quality and flavour.
At El Vergel, volcanic soils, warm temperatures, and careful cultivation combine to produce coffee with exceptional sweetness and refined complexity. Elias and Shady Bayter’s commitment to experimentation and quality continues to reveal new possibilities in coffee production. In this lot of Bourbon Sidra - a variety prized for its complexity in vibrant fruit character and elegant sweetness - you can expect juicy notes of strawberry and red apples, with the sweetness of peach.
